The Fluffiest of Vegan Pancakes

GAME CHANGER.

You're a mom. You want your baby to love pancakes. But, more importantly, you want your baby to love vegan pancakes. Tall order? Think again! In walks the fluffiest of vegan pancakes. If you're not privy to the challenges traditionally surrounding the vegan pancake, let me clue you in: vegan pancakes are super yummy but typically pretty flat and therefore dull! But not these beauties - these fluffy pancakes are the exception to the rule, rising high and golden brown, just like the pancakes we want and need. The secret is the baking powder. When exposed to liquid and heat, baking powder releases tiny bubbles of carbon dioxide giving it a light and (literally) airy texture. Eggs? Who needs 'em. Check out the recipe below for these delicious treats. <3
Ingredients (Makes 6 - 8 medium pancakes or 12-16 mini pancakes, highly recommend!)
Dry Ingredients
1 cup all purpose or whole wheat flour
2 t baking powder
1-2 T sugar
Wet Ingredients
1 cup vegan milk of choice (I typically use almond milk)
¼ cup water
1 T oil of choice ( I like coconut oil for extra sweetness)
Instructions
1. Mix Dry Ingredients
In a medium bowl mix together dry ingredients
Flour
Baking powder
Sugar
2. Mix Wet Ingredients
In a separate bowl mix together wet ingredients
Vegan milk
Water
Oil
3. Combine
Pour the wet mixture into the dry mixture. Stir gently until just combined - do not over mix! Chunks are welcomed here.
4. Preheat Your Pan
Heat a lightly oiled non-stick pan over medium heat
5. Cook the Pancakes
Pour a heaping tablespoon of batter onto the pan for each pancake.
Cook until bubbles form on the surface and the edges (2-3 mins)
Flip and cook another 1-2 mins until golden brown on the opposite side.
Serve with vegan butter, peanut butter, maple syrup, and/or
fresh fruit.
